The three ways to buy
Pappas gives you three distinct pricing structures, and they are not interchangeable.
- Family Board and Value Packs — fixed bundles, $42.95 to $229.95.
- Party trays — priced per person by number of meats: $11.75 for one or two, $12.25 for three, $12.75 for four.
- Bulk by the pound — $14.95/lb for 10–19 lb, $14.55/lb for 20–49 lb, and $14.25/lb at 50 lb and up.
The party trays look convenient and price out the worst. At $11.75 a head for one or two meats you are paying nearly double the bulk rate for the same barbecue plus disposables.
Packages and prices
The Family Board at $42.95 is the right answer for four people and the wrong answer for eight — two boards cost more than Value Pack 1 at $71.95.

What travels and what does not
Ask for brisket unsliced. A whole piece holds moisture for an hour of transit; sliced beef dries out in twenty minutes in a foil pan. This is the single biggest quality decision in a Pappas catering order and it costs nothing.
- Travels well: whole brisket (from $22.95), pork or beef sausage links, ham, pulled pork, beef ribs at $31.95/lb.
- Travels badly: anything fried. Fresh cut fries at $3.75, cheese fries at $5.75 and chopped beef fries at $10.95 are counter food and arrive soft.
- Buy in volume: iced tea by the gallon at $7.95 and lemonade at $9.95 beat individual $2.85 drinks past about four people.
Lead time and the gluten-free question
Pappas runs roughly 20 restaurants, nearly all in the Houston area, and they are company-operated rather than franchised — which means catering is handled store by store rather than through a national call center. Give a location 24 to 48 hours for a value pack and more for anything above 50 pounds, and call rather than order online for large jobs.
