Breakfast: 6:30am until mid-morning
The breakfast board — tacos from $1.89, sandwiches from $3.39, premium tacos from $3.65, a breakfast plate at $6.49 and sides from $0.95 — is served from open. Most locations run it until around 10:30 or 11:00am, when the kitchen turns over to the barbecue counter, though the changeover time is a store decision rather than a chain rule.
This is the cheapest food Pappas sells by a wide margin. A breakfast plate at $6.49 is barely half the cheapest lunch plate, which is sausage or ham from $11.95. If you have never been to Pappas before 9am, that is the single best-value hour of its day.
When the meat is at its best
Barbecue is not evenly good across a trading day, and a Texas counter makes that visible. The pits are loaded overnight and the first full service hits the counter late morning.
