Be straight about this: Buddy's Bar-B-Q has no official secret menu, and any site selling you a list of named hidden items has invented them. What Buddy's has instead is a very short menu — five dinners, six sandwiches and baskets, four specialties, three desserts — run by counters that will actually talk to you. That combination produces a real set of off-menu builds, and unlike invented secret menus, these work.
The item most people miss is on the menu
Start here, because it is the most common mistake. The Hawg Back — pork at $8.99 to $9.99, beef at $9.99 to $10.99 — is Buddy's signature, a large open-faced serving of barbecue, and it exists at no other barbecue chain in the country. First-time visitors read past it to the familiar sandwich-and-dinner columns. Regulars order it. If you want the thing you cannot get anywhere else, it is not hidden; it is just easy to skip.
Builds that actually work at the counter
- The sandwich-plus-hushpuppies meal. A Pork Sandwich at $5.49 and ten hushpuppies at $3.99 is a complete meal for under ten dollars — cheaper than the $8.99 Pork Sandwich Basket and, if you do not want the basket's sides, better food per dollar.
- Split the Sampler. The Sampler Dinner from $16.99 is built to show you the range in one order. Divided between two people it undercuts two separate dinners and is a better introduction to the menu than either would be alone.
- Meat without the bread. Ask for a dinner's chopped pork or brisket plated without a bun. The kitchen handles this routinely and it is the standard route for anyone eating gluten-free or low-carb, as set out in the Buddy's allergen guide.
- Sauce on the side. The house tomato-and-vinegar blend goes on generously by default. On the side you control the ratio and, incidentally, the sugar.
- A gallon of sweet tea for three people. At $5.99 a gallon it is cheaper than individual drinks the moment your table hits three, and it goes home with you.
- Ask which pies were cut today. The meringue pies at $3.49 a slice come in chocolate, coconut and lemon, and the case does not always hold all three. Ask rather than point.
The upgrade nobody prices out
The basket format is Buddy's quiet arbitrage. A basket adds sides for about $3.50 over the sandwich alone — a $5.49 Pork Sandwich becomes an $8.99 Pork Sandwich Basket, a $7.49 Beef Brisket Sandwich becomes a $10.99 Beef Brisket Basket. À la carte sides at the national chains run $3.50 to $4.50 each. So the basket upgrade buys sides at roughly the price of one side elsewhere. The trick that beats every other trick
Buddy's publishes prices as ranges because it charges differently across its roughly fifteen restaurants. The low end is generally the Knoxville price; the high end applies at the Sevierville and Pigeon Forge locations in the Smokies tourist corridor. The gap is up to a dollar and a half on a single item and up to five dollars on a family pack, for identical food off identical smokers.
If two Buddy's are plausible for your trip, that choice is worth more than any ordering hack on this page. And at top-of-range pricing the math flips: a Feed 5 Family Pack from $34.99 becomes better value than individual orders even for three people.
What does not work
- Asking for meat by the pound. Buddy's does not publish a by-the-pound sheet the way the national chains do. Group orders run through the family packs or the catering desk.
- Hunting for a coupon code. There is no national coupon program, no happy hour and no lunch tier — third-party code sites are recycling expired or invented offers.
- Expecting a vegetarian workaround. With no salads and no vegetarian main, hushpuppies out of a shared fryer are the only meat-free published item.
- Ordering the Hawg Back for delivery. Sauced barbecue on open bread does not survive a drive.
