Barbecue is one of the easier cuisines to navigate with an allergy, because the core product is meat, salt, pepper and smoke. The complications at Mission BBQ are in the buns, the sides and the sauces. Here is where each allergen actually lives.
Gluten
The smoked meats themselves are the safest part of the menu. Mission BBQ rubs with salt, pepper, paprika and garlic and smokes over wood — no flour, no marinade thickeners.
| Item | Contains gluten? |
|---|---|
| Brisket, pulled pork, turkey, pulled chicken (plain) | No |
| Bay-B-Back Ribs | No |
| Sandwich bun | Yes |
| Cornbread | Yes — contains wheat flour |
| Maggie's Mac-N-Cheese | Yes — wheat pasta |
| Fresh Cut Fries | Usually no, but shared fryer risk |
| Cold Slaw | No |
| Baked Beans with Brisket | Usually no |
| Green Beans and Bacon | No |
Ordering gluten-free: any meat from the Meat Market on a tray rather than a bun, with cold slaw and green beans. That is a complete meal at roughly $15.77 with no wheat in it. Ask for it plated rather than as a sandwich so nothing touches the bread station.
Dairy
| Item | Contains dairy? |
|---|---|
| Maggie's Mac-N-Cheese | Yes |
| Cornbread | Usually — butter or buttermilk |
| Baked Cheesy Potato | Yes |
| Alabama White sauce | No dairy, but egg — mayonnaise base |
| Cold Slaw | Mayonnaise-based — egg, not dairy |
| Smoked meats, plain | No |
| Baked Beans, Green Beans | No |
Egg
The two to watch are cold slaw and Alabama White sauce, both mayonnaise-based. Potato salad, when it is in season, also contains egg.
Soy and the sauces
Most commercial barbecue sauces contain soy in some form, usually via Worcestershire. Of the eight on the wall, the two least likely to are NC Vinegar and Georgia Mustard, because they are the simplest formulations. Check the bottle at the wall — Mission BBQ sells the same bottles retail, so the ingredient panel is usually available in store.
Hidden meat in the sides
This is the one that catches vegetarians out, and the menu does not flag it:
- Baked Beans with Brisket — contains beef
- Green Beans and Bacon — contains pork
Everything else on the side list is meat-free. A workable vegetarian order is mac-n-cheese, cold slaw, cornbread and a side salad — around $10.96. There is no vegetarian main course on the Mission BBQ menu; the sides guide has the full breakdown.
Pork
For guests avoiding pork specifically: brisket, turkey, pulled chicken and smoked chicken are all safe. Avoid pulled pork, sausage (usually pork), green beans and bacon, and check the baked beans.
What the kitchen cannot control
Three honest limitations that apply at every Mission BBQ:
- Shared smoker. Pork and beef cook in the same cabinet. Cross-contact between meats is unavoidable.
- Shared fryer. Fries and any other fried item share oil.
- Shared sauce wall. Communal bottles and self-service pouring — nozzles touch trays.
None of this is a criticism; it is how a counter-service barbecue restaurant works. It does mean that for a severe allergy, the sauce wall in particular is a risk worth avoiding in favour of a sealed retail bottle at $3.99.
Ordering with an allergy — the practical script
- Ask for the manager rather than the counter server.
- Name the allergen rather than saying "allergy" — kitchens act on specifics.
- Order meat from the Meat Market on a tray, not as a sandwich.
- Take sealed bottled sauce rather than the wall.
- Ask them to change gloves before plating.
Mission BBQ publishes allergen information on its official site, and it is the authoritative source. See the full menu for every item and the nutrition guide for calorie data.
