This is the part that actually matters. Mission BBQ cooks overnight and pulls product through the day rather than holding one cook from open to close — so quality follows a predictable curve.

Two practical rules that follow from that curve:
- Mid-afternoon, order chopped brisket rather than sliced. Chopped is mixed with its own rendered fat and holds far better in a warmer.
- If you want ribs, go before 19:00. Bay-B-Backs are the item that most often sells out at busy locations.
You can also simply ask when the brisket came off — Mission BBQ counter staff will tell you straight, and the answer determines whether sliced is a good idea.
