Why the meat arrives plain

Mission BBQ rubs simply — salt, pepper, a modest amount of paprika and garlic — and smokes over wood without saucing during the cook. That is a deliberate choice, and it is the opposite of how most American chains work. The upside is that you can turn the same pulled pork into Carolina, Kansas City or Alabama barbecue at the table. The downside is that if you skip the wall, the food can taste underdressed.

So the wall is not optional. It is the second half of the dish.

The eight sauces

Texas Twang

Thin, peppery, low sugar, tomato-and-vinegar base. This is the one designed for beef, and it is the correct choice on brisket. It does not mask the meat; it sharpens it. NC Vinegar

Thin, sharp, barely any sugar — closer to a seasoned vinegar than a sauce. On pulled pork it is transformative; on anything else it is alarming. Eastern Carolina tradition, and the lightest bottle on the wall by calories.

Smoky Mountain

Thicker and smokier than Texas Twang, with more body but still not sweet. The best all-rounder on the wall — if you only try one, try this.

KC Classic

Sweet, thick, molasses-heavy. This is what most Americans picture when they hear "barbecue sauce". Safe, familiar, and the one children reach for.

Memphis Belle

Tomato-based, sweet, mild, a little thinner than KC Classic. The gentlest sauce on the wall.

Tupelo Honey Heat

Honey up front, cayenne behind it. The most interesting bottle Mission BBQ makes, and the one that surprises people. Excellent on chicken and on ribs.

Alabama White

Mayonnaise, vinegar and a lot of black pepper. It looks wrong and it belongs on smoked chicken and nothing else. Try it once on the quarter chicken; do not put it on brisket.

Georgia Mustard

Yellow mustard base with vinegar and a little sugar. South Carolina tradition. Excellent on sausage and very good on pulled pork.

If you are buying one bottle to cook with at home, take Smoky Mountain — it is the most versatile. If you are buying two, add NC Vinegar, because nothing you can buy in a supermarket does that job.

Sauce and calories

Worth knowing if you are watching the number: a restrained pour of a sweet sauce is about 40 calories and a generous one is closer to 120. NC Vinegar and Texas Twang are 10 to 20.
