What delivery actually adds
Third-party platforms typically mark restaurant menu prices up 15 to 25 percent before any fee is applied, then add delivery, service and tip on top.
That is roughly 77% more for the same food. Fees vary by market and by promotion, but the direction never changes: ordering direct and collecting is always meaningfully cheaper.
Ordering direct

The single best delivery order at Mission BBQ is meat by the pound with sides in separate containers, assembled at home. It costs less per head than individual sandwiches, it arrives in better condition, and buns are $6.99 a dozen.
Three rules for barbecue delivery
- Ask for sauce on the side. Sauced meat sitting in a container for 25 minutes goes soft.
- Order chopped rather than sliced brisket. Chopped is mixed with its own rendered fat and survives the journey; sliced does not.
- Skip the fries. There is no delivery scenario in which they arrive well.
Reheating a delivery order
- Pulled pork: covered pan, splash of apple juice, 275°F, 15 minutes.
- Sliced brisket: wrapped in foil with a little stock, 250°F, 20 minutes. Never microwave it.
- Ribs: foil at 250°F for 20 minutes, then 2 minutes uncovered under a hot grill.
- Mac-n-cheese: microwave is fine, stir halfway.
For a group
Delivery for a party is where the app markup hurts most, because it scales with the order. A 25-person catering order at roughly $300 direct becomes closer to $480 through a platform once markup and fees stack.
